Omelette with vegetables and potatoes

A fun way to use up leftovers is an omelet. You can literally use anything in this, such as vegetables and potatoes.

  1. Cut the potatoes and vegetables into slices or strips
  2. Fry this in the pan
  3. Beat 2 eggs in a bowl and season with salt, pepper, dried and/or fresh herbs as desired and pour into the pan.
  4. Fry on a medium heat
  5. Bon appetit!
